I am a bit confused about the Off Color Challenge. I am not sure where you would find these types of creatures or plants. Does it have to be a living thing? Since it is minimal you couldn't change colors in post processing. As written the Challenge seems very difficult to find subjects. Any thoughts?

Note the emphasis above. The 3 listed objects all can actually be found in nature, and they are thus "natural", but they are unexpected. There's actually quite a bit of this stuff out there if you start to look for it, and as Illini points out creating your own off-kilter-colored object is also a viable approach.

Not difficult at all. A zoo or grocery store would be obvious places to find suitable subjects. You could put flowers in colored water, some chickens lay naturally colored eggs, maybe there are black or albino squirreles in your neighborhood, you might have some decorative corn from Halloween, or maybe you could shoot something fluorescent under a blacklight. Just use your imagination.

I agree.

Not amused. But, it doesn't hurt to throw it out there, I suppose...
