We'll be staying in the Vail, Avon, Beaver Creek area.

I've done some online searching and it looks like there are some good hiking options in the area.

can anyone recommend specific trails that have good photo potential?

How far you thinking of going? What physical condition are you in? When are you arriving?

A moderate trail fairly close you might like is hanging lake, only about a 1 mile hike but fairly steep hike. Just head towards glenwood springs on I70 and watch for the exit shortly after entering the canyon.

I am looking for day hikes. Nothing that requires setting up camp overnight.

We're in pretty good shape. I was at Yosemite in May and did 2 of the most strenuous hikes, 4-mile and Panorama in the same day, 13 miles and 4000 ft elevation rise/fall in all.

I'll be with my wife and 13 year old son, so probably not looking for anything too difficult, but we can handle a decent hike.

We will be there July 13-20.

Apologies for taking so long to respond.
It's a bit out of the way for you, but you might consider checking out the Maroon Bells. So far as iconic areas, they are near the top. It's around a 2 hour drive from Vail, but there are some trails that are easily accessed and provide access to great photographic options Maroon Bells. If you want lesser trodden areas, look into the Gore Range. Gore Range Beautiful peaks and far less people.

If you're looking into doing a "Colorado" thing like climb a 14er, Grays/Torreys are both nearby and serve as nice introductory 14,000+ peaks to climb and are relatively close. Mt Massive and Mt Elbert are other options along the same line. You can find detailed info on all these peaks at either Summit Post or 14ers.com. Be aware that most 14ers are pretty busy on the weekends (not all, but most of those I'd recommend as a first 14er).

One overall rule that I'd recommend concerning safety in the Colorado high country is to always start as early as you can and assume that the afternoon will devolve into dangerous thunderstorms. That's the typical pattern for the weather, with storms coming from the west. Mornings are often still and pleasant, with afternoons bringing lightning and often some rain. Also be aware of deadfall in all areas of the high county, as our forests have suffered immensely from the beetle kill lately.
