When shooting for minimal challenges I always shoot RAW + jpg so that I have the RAW available if I want to use it later on. Usually the two unedited versions look pretty similar, but the two versions of my entry for the Improper White Balance challenge look totally different. The DNG version of the photo (converted from RAW) looks horrible, with really dull colours.

Would using Canon software and the original RAW give me an image more closely resembling the jpg, which shows the colours I saw on my camera?

The WB is irrelevant to the RAW data. No matter what WB you set, the RAW data will be the same. The Canon software will indeed look at the camera settings for WB and Picture Style and pretty much duplicate what you saw on the LCD by default. It's also possible to get close to this look in other software such as Lr by selecting "as shot" for WB. You won't have the effect of whatever Picture Style was set.

Camera Raw is showing the white balance "as shot", and the colours are closer to my chosen WB than what the human eye sees. However the colour is quite different from the jpg and the contrast is off too. I guess I'll have to look for a Canon software download and see if that makes a difference. I was quite surprised that my new camera didn't come with software.

Edit: I just tried opening the RAW file in Camera Raw and I discovered that the main issue is that the saturation is way below what it should be. Bumping that up makes quite a difference, though the contrast still needs a bit of tweaking. I'm still going to look into Canon software though because it might cut down on the editing required to get my photos looking that way I want them to.

I didn't realize it was minimal until I went to submit, then I realized I couldn't do what I wanted, and submitted anyway.
I knew I was going to pay for it.

ETA: And yes, I was shooting RAW+jpg. I turned the RAW file into something truly pleasing for use elsewhere, so there's that.

RAW is what the camera captures. JPG is what you get after your camera processes the RAW data. Many cameras have settings for the processing so the photographer can make some decisions, but basically you are letting the camera's programming control your final results.
