 Lemon-garlic marinated shrimp for two (maybe three)

Ingredients: 3/4 lb large shrimp shelled & deveined; juice of one lemon; three-four large heads garlic finely chopped; salt & freshly ground black pepper to taste.

Directions: mix ingredients in a bowl (or plastic bag) and marinate for approximately 20 minutes, mixing frequently (every two minutes) to evenly distribute marinate. Just before grilling, add approximately two tablespoons olive oil and mix well.

Grilling: brush/spray canola oil on clean grill and heat on high for several minutes until very hot. Place shrimp individually on grill and leave untouched for about two minutes. When color turns pink and white, turn each carefully and grill for additional one minute. Remove and serve.
Note: grilling times will vary depending on grill heat and size of shrimp. Closely watch to avoid over cooking.
