Hi,
Whenever I change the user settings to 1.2 or 3, I can see the LCD grainy and not as what we can see in the 'A' user setting.
Also, there are several metering modes that are available in 5700. Which is the best mode to use at most of the times

What you have going on with the grainyness is the focus confirmation is on. This is to help determine the sharp (in focus) areas when shooting, particularly in manual focus. You can turn that on, off, or only when in manual mode in the Focus options menu. Check your manual for more indepth instructions (always good to read the thing anyway-I have about 5 times).
As for metering modes, depends on what you are doing. Leaving it on the Matrix setting will give probably your best results for general things and off the cuff shooting that you don't have time to adjust. I have mine set up so that the Func button (User button) is used for this. Quicker to switch.
