I am looking to create a table to shoot products on - how thick of plexiglass should I get?

Thanks,

It all depends on the weight of the products, the dimensions of the plexiglass top and whether there will be any crossbraces supporting the plexi.

With 1/4" plexi you can probaby get about as big as 2x2' before it starts to flex and sag, if if your table has a brace across the middle you can get much larger.

So... why plexi for the table top? Only reason I can think of is so you can have light come from underneath?

If you want your products to reflect on a dark surface, just get normal glass whatever size you want, and paint one side completely black. 2 or 3 coats should do it. Then lay the glass with the black side down and you'll get a nice reflection.

I think you can use any thickness plexiglass if you're placing it on a table surface with some sort of paper/cloth underneath the plexi to create a seamless background...

Plexi is a good idea. You can buy clear or white or... types of plexi of virtually any size. 0.25" thick is a good thickness to work with. I would recopmmend using a glass support under it for larger sizes. Plexi is easy to scratch. You can buff out the scratches (check plexi aquariums via Google for more information). If you use glass on the top, you will have a more durable surface. Glass covered in paper with lights underneath gives a good effect at times.
