I have a giant softbox, two octaboxes, a d80, 50mm 1.8, 85mm 1.8, and a 18-70mm. I use manual mode and 125 shutter speed...what about the Aperture??? |

Depends on what you're trying to go for in the portrait. why 1/125 shutter speed specifically? also your aperature will depend on what setting your lights are at? this isn't a science but rather an art and what mood or effect you want will dictate what settings you use. |

I am into fashion shoots on white backgrounds..pretty much high key

Since you're shooting a white background (I assume you have a background light shining on the background to blow it out), you don't have to worry about details in the background. So shallow depth of field is not a high priority. For that reason, I'd probably stick it on whatever aperture is the sharpest your lens has ... usually about f/8. Then adjust the lights to match.
So measure f/8 on your subject and f/11 on your background and you're all set.

I have a Toyota Matrix with manual transmission. I usually drive on freeways. Which gear should I use?

Either use your histogram or buy a lightmeter.
