Using the 580ex11 I do not want to expose anything other than the subject what should my flash/camera be set to.

use the fastest shutter speed you can (i think its 1/250) to reduce the ambient light. Set your aperture on whatever you need to expose the subject.

You may need a snoot or a gobo or something else that stops the light form going where you don't want it to go.

do it in the dark & keep plenty of separation from the subject & the background
