I've been looking and haven't been able to find a way to change the type of font used in Lightroom's Copyright Watermark, the one you can choose to add to photos upon export. Can anyone help? Or am I stuck using Photoshop outside of Lightroom?

You can if you use the mogrify plugin. Mogrify gives you many more options on export as well.
