I believe there's a law in the UK now that says you can't photograph police officers. Don't know about the other emergency services though.

I got some good ones before here in Sydney:

Nice idea...last thing Id like is to take the job home with me, or on DPC..oh and EMS workers shouldn't take photos at work because of HIPAA laws. But hey, anyone could take pics of EMS, would make for some good photo journalism. On my off days, I want nothing to do with ambulances!
