Ok. ive been posting alot here lately. but hey, thats what this places for right? anyway, im amazed at the coloring these people have got in their photos and am wondering if anyone can determin how they do this. Is this done while the picture is being taken? or is post processing in like in photoshop...? Any ideas on how these guys do this? thanks!

The first and the second look like they just saturated the color a bit more than usual, this can be done easily enough in most photo editing programs (such as Photoshop) or with a polorizer attachment.

The second one looks like they did some color adjustments in an editing program, or perhaps used a color filter or selectively incorrect white balance. Although that walkway could be blue naturally.

Another method for making photos more vibrant (my favoraite way) is to use curves.

Most adjustments in the "Image>Adjustments>" drop down in Photoshop are actually simplified versions of curves. Levels, contrast, brightness, saturation, color balance, invert, equalize, ect are just products of photoshop manipulating the curves for you though a more simple (and less precise) dialog box.

Curves are king. They seem very mysterious at first but its the ultimate in control. Also curves are acceptable ways to manipulate open challenge images.

I agree completely. They also help you understand Duotones, which use a variation of Curves, and they can be used to obtain not only the subtlest of tone enhancements, but quite extreme effects as well, as you can see in these Before & After examples (alternates for the Abstract challenge):
