Simply put, this took a few trials of setting various screen colors on the iPhone and then waving them by hand, while the camera was in bulb mode. Started with a slightly different concept of hanging the iPhones and twisting them around, but those didn't turn out as I'd envisioned. This worked out better and here it is. I have a few more variants of these - but I liked this one specifically because you can actually see the iPhone screen clearly on the red "fall".
