 Using couscous, wooden stencils and a translucide cutting board placed on the living room table (which has a glass top). Using a red cardboard on the floor under the table, I directed 2 spots on it and took the picture from above.

Wow...It must have been REALLY painfull to do these letters. Kudos for your patience :) Like the light effect btw, very nice image.

That is pretty cool, though I'm not sure what it actually is, doesn't really matter though, the background is what really adds impact to this photo in my opinion. Extra point for creativity.
