From my Better Homes and Gardens New Cook Book, eighth edition, seventh printing, 1974. Page 268.

This cookbook is soaked in butter due to an accident several years ago. I think that helps.

''Halve hard-cooked eggs lengthwise; remove yolks and mash with desired combination of seasonings, below. Refill whites. For 6 eggs, use 1/4 cup mayonnaise, 1 teaspoon vinegar, 1 teaspoon prepared mustard, 1/8 teaspoon salt, and dash pepper.''

There are other fillings listed, but they have gross things like olives in them, so I shan't repeat them.

Put the eggs in a saucepan in enough cold water to cover them, and put the pan on high heat. When the water boils, set a timer for 7 minutes. When it goes off, take the pan off the stove and run cold water into it until the eggs are no longer warm when held tightly in your hand.

Crack the shell all over and peel. Set on a clean countertop or plate and slice each egg in half along the vertical axis where it naturally rests (so you don't get a bigger yolk opening on one side than the other). Use a narrow, curved paring knife to slice them to avoid messy edges.

Remove the yolks with a small fork to help break up the yolks into the mayonnaise mixture.

I added a dill and paprika garnish to these eggs. I also usually put paprika and dill in the filling, but wanted to keep the yellow pure this time. I also often put horseradish in the filling.

YUM!

I make these eggs all the time! I put mayo, grated cheese, mustard, salt and pepper in mine! Delicious! :D I loved this photo, I am surprised it didn't rate higher, I gave it a 10! =/

I love these little guys, and so am anxious to see your recipe! Fun title, too! You might want to experiment with point of view here some more. The depth of field you're using is usually used to indicate that the part that is in focus is just like the parts that are out of focus. However, in this shot, we can really see everything, so we (I) just wish it were all in sharp focus. If your point of view were much closer, say on one or two eggs, then the depth of field could imply that there are more eggs behind the one in focus and that a sinfully good time awaits if we were to indulge. Just something to think about. Nice work!

I like the arrangement and the lighting. The specular highlights in the filling show its unusually creamy texture.

Hmmm... Only seven halves... I couldn't have resisted eating one either. ;-)

I think this photo would be better if all the eggs were in focus. The shadows are distracting as well.

Great shot. Nice green background. Good angle and setting up of subject. Nice composition and DOF. 9.

Nice use of contrasting colors here. Also really like the shadows. Focus is dead on on the four o'clock egg. The DOF is too tight though. This makes the rest of the image a little hard to look at.

I would have loved this image were it not for the harsh green background. The eggs look tasty and there is good presentation. Focus could be somewhat sharper in the background.

The eggs look good :) I don't care for the color combination. The green is hard to look at.

Gimme, Gimme, GIMME! I love deviled eggs and these look delicious. Great presentation on the eggs and I can't wait to see the recipe. As for the balance, the off center doesn't really work for me personally and the background is a nice contrast but I'm almost wondering how a blue one would have looked. I'm starting this one at 6 but I'll be back to drool, er, vote again

Colors are great. Composition is perfect. However, seems too blurry in places.

look tasty!

Only a 9. Focus could have been better, perhaps. And, I personally, don't think green works that well. Makes the yolk seem greenish. Perhaps something in pink towards red, though soft, may have worked better.

I do love deviled eggs! The color contrasts are very nice, I do wish the focus extended to all of the eggs. Its a solid image but I find myself looking for an additional piece to the composition to add more depth - I'm not sure what, a prop of some sort maybe? 6

Love the interesting pattern that you arrange the eggs in. Deviled eggs are excellent and if these taste as good as they look you are very lucky. The great bold shadows help to give extra interest to the shot. All the colors that are represented in the subject helps to make them pop out of the shot. Definitely a great cookbook type photo.
