 I've been awfully absent from challenges lately due to almost every affliction under the sun, but when a food theme came up, I had to put in the effort!

Nduja is an extremely spicy meat and chilli pepper paste from Calabria, Italy. I had a great time making some of it especially for this recipe. I was going to make this for our family dinner, but then I realised that my 1 year old might not appreciate it so much :) I made a modified version for dinner, put her to bed, then moved on to the cooking and shoot.

It's been a while since I had my speedlights out, so I was a bit out of practice. I tried this with an umbrella, but I decided in the end that bare-bulb flash worked better in this case (mimicking sunlight better I think).

The wine is the 2005 d'Arenberg The Footbolt Shiraz from the region of McLaren Vale in South Australia.

My only goal in this challenge is to be within cooee of Enzo, but I think that might be a little ambitious!

I love the depth of clarity that you got on the pasta. The table set-up seems a little scattered with the crossed utensils and the tilted placemat. The sprigs of basil (?) are a nice touch. 7

People should be required to submit recipes with these entries. This looks really tasty, and the presentation is outstanding.
