...with Homemade Raspberry Jam filling. My mother made the jam. These are on my top 5 list of favorites personally.

Recipe for those who asked...

Almond spritz with raspberry filling

3/4 cup butter
3/4 cup sugar
1 large egg
2 teaspoons almond extract
2 cups all purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
raspberry jam (or whatever flavor you like)

Cream butter. Add sugar gradually into mixing bowl with butter until light and fluffy. Add egg & vanilla, mix using medium speed.
Combine flour, baking powder & salt in separate bowl. Add to butter/sugar mixture in 3 additions, mixing well after each. Dough will be stiff.

Using a cookie press with design that leaves a hole in the middle. Shoot out your cookies and fill with jam. Bake on 350F on ungreased cookie sheet for 10-12 minutes or until lightly browned. Do not overbake. Remove to wire rack to cool immediately to prevent sticking on cookie sheet.

oh kelli .. toss one over here .. !!
these look so yummy .. now i'll have to have a biscuit and it wont be anything like one of your home made ones .. home made are the best .. my sister-in-law makes the most excellent biscuits .. in fact i often nick a biscuit or two when i visit .. which is quite often .. peanut butter cookies and anzacs are my favs of hers .. i've tried a couple of times to make the anzac cookies .. its the most easy recipe ever .. somehow or other i couldnt get it right .. they didnt get the right consistency or hardness .. oh well .. cooking .. i used to enjoy it, but not any more ..
well .. that was a long comment wasnt it .... i'm making up for not making comments for DAYS .. !!!..:)

Yum! Gotta have one of those cookie maker things to make these, but I do remember these from my childhood! And homemade raspberry jam is the best!
