 Picture was taken on a window seat with a lot of natural light. To kill some of the shadows I have a table lamp (don't have the cash yet for better lighting!) on the floor under the window seat.
The "Irish Flag" was painted with crayola paints onto the potato.
The Rainbow effect was done by using a "rainbow on a stick" which is basically a bunch of stickers on cardboard:

Using my timer I waved the stick behind the potatoes when the shutter released.

I also cropped, resized, and tweaked the contrast in Capture NX2

Nice idea. The only thing that bothers me a bit is that the colors on the potato seem somehow less bright than the rainbow. 7

That's a grand pot of spuds!
I'm curious about how you got the rainbow in basic. Was it with a long exposure and sweeping of some colours?
Hopefully it'll be in the notes.

Irish?? I like this, how did you do the rainbow?
Perhaps it would have been nice if the potatoes were a bit dirtier...they are too clean to be Irish ones, newly picked. :P Still I gave you a 9 for the Irish connection.
