Sabal palms grow in bunches like this, and are called "Cabbage Heads" by the locals. The trees are called "Swamp Cabbage" because you can cook and eat the bud, which is in the center of the top of the tree. These are much too big to cut for the cabbage though. There is about 2 lbs or so in each tree. Swamp Cabbage
It was a staple in the diet of the local pioneers. There are a lot of these trees in the wild here, and they grow big enough to eat in 4 or 5 years. You are "supposed" to get a permit to cut them now.
There is a deer at the right end of the cabbage head.

So that's what they look like in the wild.

When I lived in Brazil we could buy fresh palmito (Portuguese for swamp cabbage) in the open market. The Joy of Cooking had instructions for preparing it, so I tried it a couple of times. Two kilos of fresh palmito gae me about a cup and a half of usable flesh which I served with a vinaigrette dressing. It was good, but not noticeably better than the stuff that came ina can from the supermarket.
