Baklava (Greek family recipe):
- 5 or 6 cups (1 1/2 pounds) of ground walnuts
- 1/2 cup of sugar
- 1 1/2 teaspoon of cinnamon
- 1 teaspoon of nutmeg
- 1/8 teaspoon of ground cloves
- 1/2 cup (1 stick) of melted butter
- 1 tablespoon of water
- 1 pound of fillo dough
Set fillo dough and melted butter to the side. Mix everything else in a bowl. Use deep 9”x14” baking pan. Lay a sheet of fillo dough covering the bottom of the pan. Completely butter the sheet with a brush. Repeat until you have base of 5-8 buttered layers of fillo. Spread in a thin layer of nut mixture. Add another 2 sheets of fillo on top of nut mixture, making sure to butter them. Add another layer of nut mixture. Repeat until baklava is desired thickness. Top layer should be 7-8 sheets of buttered fillo. With a sharp knife cut it into squares or triangles. Bake in oven at 325 degrees for 50 minutes or until golden brown.
Baklava Syrup:
1 small lemon rind
1 cup sugar
1 cup water
1 stick cinnamon
2 whole cloves
1 cup honey
Remove rind (skin – thin yellow part, no white) from lemon. Squeeze out 1 1/2 teaspoons of juice into large heat resistant cup and set aside. Place lemon rind, sugar, water, cinnamon stick, cloves, into a medium size sauce pan (with a thermometer lid). Bring to a boil, lower heat, and continue cooking without stirring for 25 minutes or until mixture is thick and syrupy (230 degrees on lid thermometer). Remove pan from heat and stir in honey. Pour mixture through a strainer into the large cup that the lemon juice is in. Pour over hot or cooled Baklava.

Nice DOF. Too many of the images in this competition were just too busy. I like this comp for it's simplicity and elegance. It's well lit, and the background tones don't dominate, but rather compliment the subject well. Well done. |

i think i wouldve like this better if the the color of the table under the doily was darker. the red in the background does add a nice contrast but i gotta say, this shot made me drool and for that, means your intention came across..hehe |
