Ratatouille

One of my signature dishes

1 large eggplant
4 zucchini
1 large onion
2 green bell peppers
lots and lots of garlic
1 large can of tomatoes or
8 very ripe vine tomatoes
basil
salt
pepper
1/3 cup extra virgin olive oil (EVOO)

In a blender, puree your peeled cloves of garlic (I'd say, at least four large) with the oil. Add 1 tsp salt, blend some more. Keep garlic oil in a small bowl.

Peel eggplant and cut into generous cubes - not quite an inch or 2cm. Toss it with 2 tbsp of the garlic oil and spread out on a baking sheet. Broil for about 5 minutes - it will depend on your oven - or until the eggplant starts to show color. No need to toss - you just want a bit of char on one side.

Place eggplant in the pot in which you will prepare the whole dish.

Now toss generously-cubed zucchini with 2 tbsp of the garlic oil and broil. Put in pot.

Repeat with onion and then with the bell peppers. All the pieces should be largish. You don't want mush in the end but recognizable pieces of vegetable.

Once all your vegetables are in the pot, either add your can of tomatoes, or the roughly chopped fresh tomatoes and stir until it starts to simmer. Add some pepper and taste for salt. Put on lid and simmer for at least 30 minutes. You want the flavors to really come together.

Once vegetables are fork tender, and just before you serve, fold in chiffonade of basil and let the dish settle.

You want to serve this in bowls with very good, warm baguette and parmesan cheese on the side. A rustic red wine will go well with this dish.

came from pik your fav pic and noticed this very excellent food shot on your front page ..
last night we watched the animated movie .. probably wouldnt watch it by myself, but it was very cute .. i really enjoyed it .. anyhoooooo .. i wasnt sure what ratatouille was so i opened this one up thinking you'd probably have the recipe in your comments ..
sounds extremely delicious .. you should write a cook book along with the other one you're writing .. !!

It's funny - I was thinking of that animated movie hehe. I love the focus and the capture of the veggie colors. Great use of water drops too. It looks so yummy even before you cook it!

compositionally, theres alot going on here. I'm a believer that wet produce can dress up an image, but I think the wet garlic stands out too much, and maybe the wet onion as well. I don't really like the DOF here, and the comp seems underexposed.
