One can never have too much coffee, as far as I’m concerned. This recipe calls for grated coffee beans, which I’ve always thought absurd…use a very fine ground espresso bean (turkish coffee ground size, if your grinder can handle it). Also, don’t use a broiler unless you have a very good gas one, such as those which are found in Amana ranges. A bad broiler won’t melt/burn the sugar fast enough, and the custard will melt. If you don’t have a good broiler, use a blowtorch (that’s what I do). Lastly, don’t leave out the mint, and make sure it’s fresh.

* 1 1/2 cups whipping cream
* 1 cup milk
* 1/2 cup plus 2 tablespoons sugar
* 2 tablespoons cappucino
* 10 fresh mint leaves
* 7 large egg yolks, beaten to blend
* 1/2 teaspoon grated coffee beans
* 1 tablespoon sugar

1. Preheat oven to 350F. Combine cream, milk, 1/2 cup plus 2 tablespoons sugar, cappucino, and mint in heavy medium saucepan. Bring mixture to boil. Set aside to cool. Strain cream mixture into medium bowl. Whisk in yolks to blend well. Stir in coffee beans
2. Pour cream mixture into six 1/2 cup ramekins. Arrange ramekins in baking pan. Add enough boiling water to pan to come halfway up sides of ramekins. Bake until cream mixture is set and moves only slightly when ramekin is shaken, about 30 minutes. Remove pan from oven and cool ramekins in pan. Cover and refrigerate ramekins until theyÍre chilled and firm.
3. Just before serving, preheat broiler. Sprinkle each dessert with 1/2 teaspoon sugar. Broil until sugar caramelizes. Serve desserts immediately.

The composition is great, and I like how you left 'cino' in. I think the coffee-colored writing really adds something to the image instead of just a plain mug/cup. The use of dof is excellent, the lighting is wonderful, the image has great sharpness where it needs to be. I could without doubt see this in a cookery book, on packaging, advertising, or a number of other places. Very well done.

Great depth of field. The great focus on the foreground beans and then the lettering and the background beans give the picture incredible depth. The lighting gives the beans a beautiful highlight. I can almost smell the beans. Wonderful shot.

I think it said food item, not drink item, but since I'm not really sure what a creme brulee is, maybe it's a food. Either way, this is a really nice photo. I like the DOF, I think it's the key factor in the photo in my opinion. The way you focused on the beans in the cup, and have the background out of focus and non distracting is great. I like the lettering on the cup. It adds just enough difference to the beans, that it really works well. great focus on the beans in the cup. makes for some great detail in the textures. Having it off center like this also really looks good. Very nice shot. ~Heather~

I love coffee bean shots, I can't explain why but when they are done well I just love them and the really odd part is that I don't even drink coffee! LOL! Tis is a wonderful shot, the DOF ( I originally had DOG, LOL) is perfect, the cropping is wonderful, this is a 10 if I ever saw one. Hope you have some special spices to add to this so I can try them on my husband!

So far, this is my favorite shot in the challenge. I love the composition, with just 1/4 of the cup showing, with handle. I've seen shots with coffee beans surrounding the cup, but never in it too! Great job! I give it a 9 (10 if it had just a little more DOF for the handle). JD Anderson

I'm not a fan of coffee in any form, but I'm willing to overcome my bias. I love this photo. The lighting is great, I like that the words on the cup and the beans inside are all in focus. The use of other beans as background is great - gives wonderful depth. Nothing looks overdone - simple. 10

I'll go 10 because I know it rates it. I am a little uncomfortable with it but can't figure out why. Perhaps the lack of another contrasting object ? hhmmm... althought the lettering may fit that bill. Ain't I picky...

Very professional, nice use of DOF to throw out beans on table surface and focus on those in cup. Composition with curved sweep of cup edge and then handle... love it!
