Apricot Freezer Jam
Fill a heavy bottomed cooking pot with washed,pitted, and quartered apricots. Add a little water and cover, cook over medium heat until the apricots have lost their shape. Mash with a potato masher and cook until the desired consistency is reached. Add pure white sugar to your taste. I have also tried honey, maple syrup, rice syrup or brown sugar but white death tastes the best. (don't burn your mouth when you taste!)Ladle into sparking clean jars and after it is cool store in the freezer up to one year.

I like my jam a litttle runny; it can also be used as a topping for yogurt or ice cream.

Note: IMO for some unknown reason cooked apricots taste better than fresh ones.

The shadow of the jar is a bit distracting for me. Otherwise, a creative recipe.
